Easy Tiramisu Cups – Recipe 1

“It’s Party Time”
It was my partners birthday on the weekend and we had some family over for after dinner ‘drinks and desserts’. Normally I love to make savoury food over sweet, but this time it was just desserts. One of the desserts I made was tiramisu, but instead of making it in one big bowl, I made tiramisu in 18 miniture latte glasses. The smaller portions looked great on the table and everyone was able to easily grab a glass instead of serving up a portion onto a plate.
I used my easy tiramisu recipe that I’ve been using for years, the only adjustment I had to make was cutting the sponge biscuits in thirds to fit them in the glasses.
EASY TIRAMISU
Ingredients:
300ml Thickened Cream
500g Marscarpone
1 cup Icing Sugar, sifted
3 Egg yolks
2 Tablespoons Coffee Liqueur
1 Tablespoon Vanilla Essence
1 Cup Hot Water
1/4 cup Instant Coffee Granules
3 Tablespoons Sugar
18 Sponge Finger Biscuits
Cocoa Powder for dusting
Method:
*Beat the cream until thick, then add marscarpone, incing sugar, egg yolks, liqueur and vanilla, beat well.
*Combine the hot water, instant coffee granules and sugar, stirring till dissolved. Cool.
*Drop a spoon of cream mixture into base of latte glasses.
* Cut 6 biscuits in thirds and dip into coffee mixture. arrange biscuits over the cream and layer another spoon of cream on top of biscuits. Cut remaining biscuits accordingly to size of glasses, dip in coffee mixture and layer on top of biscuits.
*Spoon remaining cream on top and refrigerate overnight.
*Served dusted with Cocoa powder.

awwww, these would be great for portion control. although how do you stop at just one cup??
I think it looks prettier in individual glasses. When you make one large one, it starts looking quite disheveled after you start scooping portions out of it.
